This intensive internship provides hands-on training in the industrial "bean-to-bar" chocolate manufacturing process. Interns will transition through the entire production cycle, learning to operate specialized equipment while maintaining strict federal food safety standards.This program is designed around 3 modules (each module takes 1-2 weeks to complete:Module 1: Food Safety & Molding Operations Participants learn FDA compliance guidelines and the technical operation of precision chocolate molding machinery.Module 2: Industrial Packaging & Sanitation Focus on operating high-speed packaging machinery and mastering "reset" sanitation protocols to maintain production efficiency and safety between batches.Module 3: Refining & Roasting Thermodynamics Hands-on instruction on the "heart" of the factory: operating the ball mill and the cacao roaster to refine raw materials into finished chocolate.Work Environment & RequirementsLocation: In-Person (Factory Floor).Physical: Ability to stand for long periods and lift up to 30 lbs repetitively.Safety: Willingness to work in a noisy industrial environment and wear all required PPE (hairnets, aprons, noise abatement, etc.).Administrative: Responsibility for maintaining detailed industrial logs and data records.
